My Month as a Vegan: Week 1

I decided for the month of February that I would decide to be a vegan. I just felt like doing it to see if I could. We could debate all day on what a true veganism is, but for my purpose, I defined being vegan as this. No meat, no cheese, no eggs, no milk, or any food containing animal product. Transitioning this week was tough. Shopping is much harder, and much more expensive. It’s sad, but true, eating healthy is expensive. I decided to weigh myself each week to see if I lose any weight.

Weight: 178 lbs

Breakfast:
For breakfast I ate mainly bannanas, apples, silk yogurt and cliff bars. This really kick started my metablism. Even after I ate, within the next hour I was starving.

Lunch:
Lunch was the biggest hurdle this week as I am used to eating out for lunch with coworkers. I had a baby green salad with Morning Star “chicken”, vegan “hotdog”, the vegan burritto from Tiajuana Flats, cheeseless veggie pizza from Lazy Moon pizza, and a Morning Star “riblet”.

Dinner:
Dinner was by far the most fun to do because their are so many different options for meals. I cooked whole wheat rotini pasta stir fry, black bean quesadillas, and vegan hotdogs. I had leftovers which I ate throughout the week.

Overall I Feel:
I am really missing chicken, and I really miss cheese. This week was a struggle to stick with it. My body felt great the first couple of days this week. I didn’t feel like I was putting garbage into my body. This could be the placebo effect though. Today I felt very uneasy, my stomach was hurting and I felt very dizzy. I think it may be due to a sudden drop in daily caloric intake, and not due to lack of protein. I have made it a point to make sure I still get plenty of protein in my meals.
